This is an easy no bake slice that’s good for the kids and for adults. It took me about ten minutes to make and will set in the fridge in an hour to an hour and half. Put it in the freezer for 20 minutes if you need it set quicker. It’s refined sugar free,nut free and gluten free. My kids didn’t even notice the sunflower seeds as they are mixed in with the popcorn, and the dates and sunflower seeds give it a good fibre hit.
Ingredients:
2 x cups popped popcorn
1/2 cup shredded coconut
2/3 cup coconut oil, melted
1/4 cup cacao or cocoa powder
1 x cup dates, medjool are stickier but make sure you take the pips out first!
1/2 cup sunflower seeds
pinch sea salt
1/2 cup hot water
1.5 tbsp honey or maple syrup
Blend the dates in a food processor or thermomix. Melt the cooconut oil and honey/maple syrup and place into the food processor with the salt, sunflower seeds and cacao/cocoa. Mix until processed. Add the hot water in and process again until all combined.
Mix the pop corn and coconut together roughly in a big bowl. Add the chocolate and date mixture together until all combined. Line a tray with baking paper and press the mixture into it. Pop in the fridge until set, then slice into squares or bars.
