Choc Raspberry Mousse

This serves 4




-2 x avocadoes

-60 grams frozen or fresh raspberries

-1/2 cup light coconut milk

-1 x tbsp cacao or cocoa

-1 x tbsp honey or maple syrup

-4 Tbsp crushed toasted nuts like cashews or pecans for topping (optional)


Cut both avocados in half and remove stones. Scoop out the flesh with a large spoon and place in a food processor/blender/thermomix with raspberries, coconut milk, cacao and maple syrup/honey. Blend until it’s a smooth like consistency. Top with toasted nuts for the crunch factor and a few extra raspberries. 


* Fructose people or Fodmaps people just watch the amount you have, as depending on your tolerance, an 1/8 avocado is all that you’re meant to have. However most people on this diet can tolerate more than this.
