These little balls rock. They’re also a great way to use up strawberries that have seen their best days. Kid lunchbox friendly as they are nut free, and they still have a good amount of protein in them with the cream cheese and chia seeds. Chia seeds help with concentration too as they’re high in Omega 3 fatty acids.
You could make them higher in protein if they’re not for lunch boxes, by swapping the oats for almond meal or cashews. Try having them as a pre workout snack as the oats and strawberries provide sustained energy. They definitely hit a sweet fix, and they’re refined sugar free so good for those looking after their gut.
Best of all they are sooo easy to make, 5-10 minutes. Tops.
- 250 grams cream cheese, cubed (low fat if trying to keep the kj down, not necessary for most children though)
- 250 grams strawberries
- 1 cup coconut ( 1/2 cup is for rolling)
- 1 x cup oats
- 1/2 cup chia seeds
- 1 x tbsp maple syrup
In a food processor or thermomix add the oats and blitz until crumb like consistency. Then add the cream cheese and strawberries and blend until combined. Sprinkle the chia seeds and coconut in and add the maple syrup and mix again until all mixed together. Refrigerate for half an hour until the mixture has hardened up enough to roll into balls. Roll each ball in coconut.
These will last in the fridge for up to a week.
