I tried to make these healthy and it just didn’t work! I accidentally put too much rum in and then it didn’t taste sweet enough. So I melted approx 100g chocolate to pour a thin layer over the top and made a slice of it, to sweeten it up a bit. It’s slightly healthier using almonds and oats instead of the crushed up biscuits, and coconut cream/coconut milk instead of the intensely sickly sweet condensed milk.
INGREDIENTS:
- 1 x cup oats
- 1 x cup almonds
- 1/2 cup cranberries
- 30g cacao or cocoa
- 1/4 cup rum
- 1/2 cup desiccated coconut
- 1 x cup coconut cream or milk
- 1/4 cup maple syrup
- 1/2 cup sultanas (omit if fructose intolerant)
- 150 grams melted dark chocolate.
THERMOMIX METHOD
Blitz oats and almonds for 8 seconds, speed 8. Add in cranberries, cacao, rum, maple syrup, coconut and coconut milk. Mix for 10 seconds, speed 3. Spread on to a tray lined with baking paper. Sprinkle over sultanas if using, then squash down a little bit with the back of a spoon. Rinse out your bowl, then melt chocolate for 4 minutes, speed 2, 50 degrees. Pour evenly over the slice then refrigerate for at least 2 hours. Slice up with a knife dipped in a cup of boiling water.
