OK so there is not much healthy about this recipe, except maybe the fact that its dark chocolate instead of milk and a bit of cacao and coconut oil! But it’s Christmas, so all in moderation……
- 1/3 cup coconut oil
- 1/4 up cacao or cocoa powder
- 1/2 cup shredded coconut
- 1/2 cup cranberries
- 1 cups nuts; (almonds, cashews, pistachios)
- 2 cups pink and white marshmallows, chopped with scissor s
- 200g dark chocolate (melted)
THERMOMIX METHOD
Melt coconut oil and chocolate in thermomix for 4 minutes 50 deg, speed 2. In a separate bowl, combine all other ingredients. In a big bowl mix everything together (or use your themomix to do it, I didn’t bother though) Spray a tray with olive oil or coconut oil spray, then line with baking paper. Spread mixture evenly out on tray, then refrigerate for at approximately two hours. When slicing it up, use a knife dipped in a cup of boiling water or leave it out of the fridge to melt a little until its easier to cut.
