My little ones Grace and Ivy love making these with me and love eating them too! They’re refined sugar free, so I like popping them in a lunch box for kinder instead of a muesli bar. They are great fresh (only the first day if making Gluten Free) or yummy toasted with some nut butter. As its sweetened with banana and and maple syrup, I don’t feel guilty dishing one out for rushed breakfast times either. Plus the kids also get an omega 3, high fibre fix with the hidden chia seeds in them. It’s healthier than a bowl of supermarket breakfast cereal that’s for sure!
Gluten free, dairy free, fructose friendly and also for ‘normal’ people! Normal people with no food intolerances, just add 1/4 cup more SR flour.
INGREDIENTS:
2 x bananas, mashed
2 x eggs (lightly beaten)
1 ¼ cups of self raising flour (either gluten free/spelt/normal self raising flour. If using normal SR flour add 1.5 cups)
1/2 tsp bicarb soda
1/2 tsp baking powder
¼ cup maple syrup or honey
1 tsp vanilla essence/vanilla pod/vanilla bean paste
75 g coconut oil or butter, melted
1/2 cup coconut milk
2 tablespoons chia seeds
CONVENTIONAL METHOD:
Preheat oven to 180 degrees. Spray and line 2 x muffin tins with olive/coconut oil spray and patty cases.
Mash bananas. Melt coconut oil if hard either on the stovetop or for 45 seconds in the microwave. Lightly beat eggs in a little bowl. In a big separate bowl, mix flour, eggs, maple syrup, bananas, coconut milk, bicarb of soda and baking powder together with a wooden spoon or handbeater. Then add in vanilla, chia seeds, and coconut oil and mix again for about 30 seconds, until its all mixed together. Lastly, spoon mixture into muffin tins then place in the oven.
Cook for 15-18 minutes at 180 degrees.
THERMOMIX (OR FOOD PROCESSOR METHOD):
Preheat oven to 180 degrees. Spray and line 2 x muffin tins with olive/coconut oil spray and cup cake patty cases.
Mash bananas, then add all ingredients in to the thermomix bowl or a food processor and mix for 10 seconds on speed 4 or until mixed. Scrape down the side of the bowl and repeat.
Spoon mixture into muffin tins then place in the oven.
Cook for 15-18 minutes at 180 degrees.
