So cauliflower rice is a great alternative if you’re trying to reduce your carbs. It also looks like rice, so I managed to trick my kids into eating it by mixing it with rice and a few other salad ingredients too. I add just a bit of turmeric to it; I add turmeric to everything as its so good for inflammation in the body. I love the taste and the colour of turmeric too, its a warming spice that’s great added to Greek yogurt as a quick healthy dip or on top of curries.(especially my Easy Chicken Curry)
INGREDIENTS
- 1/2 a head of cauliflower
- 1 tsp grated fresh turmeric or ground turmeric
- 2 tablespoons coconut oil/olive oil/ butter
- salt n pepper to season
- handful of chopped parsley
Steam the cauliflower for 8 minutes. Drain, then add to a thermomix or food processor and blitz until it resembles rice. (4 seconds on speed 4 for thermomix) Add the coconut oil (melt if need be) turmeric and parsley and mix for 10 seconds on speed 3 reverse. Scrape down with the spatula and repeat if necessary. For those without a thermomix just mix with a spoon until its all combined. Season with salt n pepper.
This goes well with anything, as I said before, I mixed it with rice for my kids, then added grated carrot, corn and chopped egg. Its great with chicken, with curries or even cold as a salad base.
