Blueberry and Kiwi Chia Puddings

These are little powerhouses of fibre and protein. They make a great breakfast or are a good sweet fix. Chia puddings are the easiest thing in the world to make; 5 minutes tops and they only take a few hours to set. My kids love them too, and you can mix them up with other fruit. You can use any kind of milk with them cows, almond, goats, soy, whatever is your preference!

INGREDIENTS:

This serves 2, but just double the amount if you want to make more

  • 2 tbsps chia seeds
  • 1 x cup light coconut milk, (So Good has the lightest kj but the canned coconut milk is much creamier)
  • 1 tbsp maple syrup or honey
  • Handful of blueberries
  • 1 x kiwi fruit

DIRECTIONS:

Mix the chia seeds, coconut milk and maple syrup all together in a jug or small bowl. Pour into two different glasses, then top with blueberries and kiwi fruit.  Pop in the fridge to set for a few hours.
